Food for Thought: Reflections from South Korea
It’s almost Thanksgiving here in the U.S., when thoughts turn to gratitude…and food! As we await the turkey, stuffing, and pumpkin pie, we wondered what’s cooking elsewhere in the world. Here’s what guest blogger Katherine Kerber, who lives in South Korea, shared with us.
Every day, my friend and I go to the same Korean restaurant and in that same Korean restaurant, she orders the same thing: kimchi soup. The soup is served boiling in a personal cast iron pot, set bubbling before you. Each satisfying bite is lit on fire with the many spices in it. When I eat it, I am forced to gulp down a spoon of rice with each bite just to keep my mouth from burning. In the middle of all that heat is wholesome kimchi cabbage and other vegetables, making it a very healthy treat.

Me? I order something different each time that I’m in there. It has become my solemn duty to try everything out for everyone back at home. That way, when they come and visit, I can be a good tour guide to all of the great food. I eat kimchi tuna, ramen, egg and rice, gimbap (like California rolls… only Korean) and pretty much anything else that I check at random on the entirely Korean menu slip.When we are choosing things for our lives, whether it is food, drapes or our vocation, we have two options: try things out or settle on one thing. I am still trying things out, but my friend has settled on her one thing. Many other people are like me and my friend, and sometimes they are like both of us at once, and I think that’s okay.

Mmmm. Been teaching myself how to cook Korean food.
Do you have a specialty dish yet, Jen? I used to think I could eat hot spicy food — then my Korean friends at theology school cooked for me. Unbelievable heat! And incredibly delicious!
How neat to hear a blog on South Korean. 8 years ago I was spending Turkey Day in S. Korea where I lived for a year (when I was in the military and serving my 1 year short tour assignment). I loved that year in S. Korea – I was stationed in Osan AB (a lil’ distance from Seoul) and took in the flavors of S. Korea such as kimchi, bulgogi, ramen noodles, rolls, among other flavors. I also remember very clearly the whole “chicken on a stick” experience (something I had never had prior to landing in South Korea). All in all – what an amazing year and blessing to be able to experience such flavors and culture. I hope one day I’ll be able to visit again and see how it has evolved since I was there 2002-2003.
